Humble pie

This one is inspired by my mom, she would always make a chicken pie when we have family over for a birthday or Sunday lunch. Its affordable and can stretch a long way and very popular among our family members. I always love making a pie because its so easy and you can fill it with literally anything you fancy. You can add meat and use a steak and pepper sauce, or a spinach and feta filling. We paired this meal with veggies on the side and a glass of chardonnay.

Ingredients

1 Onion

4 chicken breasts

Two packets of mushroom sauce

Green pepper

Garlic

2 packets of today pastry

1 Egg for basting

Remember to thaw pastry before making the pie. Season chicken and boil in salt water. Once the chicken is cooked remove chicken and pull the meat off the bone and shred it with a fork. When the chicken is ready you can start by braising onions garlic and peppers, I always add garlic last so it doesn’t burn. Then add chicken to the onion mix and add mushroom sauce. Mix the filling together till its cooked. Place pastry on a non stick dish and then place filling on top then cover the top with the other pastry. Close the sides using a fork and poke holes on the top of the pie to make sure the pie does not bubble. Baste the top of the pie with some egg and pop in oven for 30 min depending on pastry instructions.

And voila you have a pie.
